Q16. Why is my tofu yield lower than expected?
Low tofu yield may be caused by poor soybean quality, insufficient soaking, low protein extraction, incorrect water ratios, unstable soy milk concentration, or incomplete coagulation. Excessive solids and moisture remaining in the okara may also indicate inefficient grinding and separation. Check the entire process instead of adjusting only the coagulant.
