There are many variants to vegan meat and vegan seafood, such as vegetarian patty, vegetarian steak, vegan chicken chicken cubes, vegan hot dog, vegan sausage, vegan cod fish filet, vegan Japanese BBQ eel, vegan fried beltfish and vegan mince. These foods are made of vegetable proteins plus vegetarian condiments; they are made into vegetarian foods that are similar to both the appearance, texture, and mouthfeel of meat and seafood.

There are many reasons why vegetarian food has become more and more trending those past few years. Among these reasons, the most worthy to notice is "the food crisis and climate change". Indeed, behind the exponential growth of world population, and the improvement of living conditions in newly industrialized countries, more and more people can afford to eat meat. Yet, soybeans are the main source of food for cattle and pigs. With the demand for beef and pork increasing sharply, cultivated fields of soybeans are becoming wider and wider. However, the amount of soybeans needed to produce every unit of meat is quite considerable. Indeed, 109 grams of soybeans are needed to produce 100 grams of chicken breast! Thus, why don't we eat soy beans directly to consume the proteins that our body needs? As a result, people are starting to wonder “how do vegetable proteins replace animal proteins?”

In addition, the adjustment of western dietary habits also pushes forward the development of the vegetarian food market. For a long time, in western dietary habits, meat took up 70% of the overall diet (while meat only takes up 10% of Chinese people’s overall diet). This kind of dietary habit often leads to consuming too much cholesterol, which then brings all sorts of health problems. Therefore, some people started to lower their daily consumption of meat and gradually included vegan meat in their diet. The report of the market survey done by Technavio suggests that the ratio of the population that is willing to consume vegetarian food now in the USA has already surpassed 10%. Of course, some people choose vegetarian food based on the motivation of being on a diet and maintaining a good body shape.

When the need of vegan meat and vegan seafood appeared in the market, people found that Chinese people already had the habit of eating vegan meat and vegan seafood. Among Chinese people, many people choose to be a vegetarian because of their religious beliefs. So, vegetables are the principle food in their diet; thus, if they want to consume proteins, vegetable protein will be their main source. Among vegetarian food, tofu has been very popular and the representative food of vegetable proteins. Tofu itself only has a little bit of soybeans fragrance. It is suitable to use every way of cooking to add flavors to it. Due to this characteristic, some Chinese people also use tofu and bean curd sheets to make tofu vegan meat.

But, the vegan meat mentioned here refers to the vegan meat and seafood that is made from using vegetable protein that undergoes two processes. The production method of the vegan meat (or vegan seafood): First, use technological techniques to extract isolate protein from beans; second, use textured soy protein extruder machine (the food processing machine in the production equipment of vegan meat, and this system also call Soya Meat Machine) to raise the temperature rapidly and pressurize to make the isolate protein change into fibrosis or textured vegan proteins. Among them, textured vegan proteins can already be used in all kinds of meals. It can replace the julienne of meat, thin slices of meat and the minced meat in the sauce of spaghetti; while fibrosis vegan proteins still need to be processed to be used in meals. We have to use normal temperature water to soak fibrosis vegan proteins and then use an extruder machine to break up the fibers of fibrosis vegan protein to make it become vegan meat paste; we then add condiments and vegetable natural ebonite to solidify the paste. Lastly, we put it in the steaming equipment or a deep fryer and heat it up, and then it will become vegan meat (and vegan seafood) such as vegetarian patty and vegetarian steak.

Maybe you would start wondering. The mouthfeels of beef, chicken, and fish are different. Why can they be made into vegetarian food that has a similar mouthfeel? Actually, besides having the characteristic of high protein, fibrosis vegan protein is also rich in fibers and the tenacity of fiber. At the stage of processing, through the textured soy protein extruder machine we use the temperature difference and different pressure to make different fibrosis vegan protein. As a result, it depends on what kind of vegan meat you want to produce. Through different production parameters, there can be difference and variation in the mouthfeel of fibrosis vegan protein; you can choose suitable fibrosis vegan protein based on the characteristics of the fibers of meat to make different vegan meat and make the mouthfeel be very close to real beef (or pork) to become the food materials that replace meat like patties and steak. In addition, fibrosis vegan protein or textured vegan protein are extracted from soybean, so these vegan food is also called soya meat or soya seafood.

Seasoning is a very important part of vegan meat and vegan seafood. However, normal vegetarian food often gives people the impression of light flavor and lack of variations.
